How do you coordinate holiday dates for large extended families?

My family in Ohio is huge and everyone has different work schedules, which is a nightmare. I looked into Doodle polls and some shared Google Sheets but those just feel too impersonal for grandma. How do you guys actually get everyone to agree on a date without causing a massive blowout?
