ASRock's B760 boards are generally solid. Unfortunately, Gigabyte's VRMs haven't been as good lately, in my experience.
Don't overthink it for non-OC. I ran an ASUS B760M-A for a similar build last year. Rock solid. Z790's extra features are overkill if you're not pushing limits. Save the $50 difference and put it towards RAM or storage. It's a 'it just works' kinda board. Happy building!
