What is the best Intel CPU for professional video editing tasks?

Which Intel CPU should I actually get for heavy 4K video editing in Premiere Pro? I'm upgrading my old rig because it is literally dying on me while I'm trying to finish this huge wedding video project for a client here in Chicago and I'm kinda freaking out about it. I have about $600 set aside just for the processor but I'm super stressed about picking the wrong one and dealing with those stability issues people keep talking about lately with the high-end chips. I was looking at the i9-14900K because everyone says it's the absolute fastest for rendering but then I read some horror stories on some subreddits about them crashing or needing these insane custom cooling setups that I just cant afford or fit in my case right now. Then other people say the i7-14700K is basically the same for actual editing but runs way cooler? I'm confused because I do a lot of After Effects work too and I really need those extra cores for the heavy stuff but I dont want my PC to blue screen every five minutes. I need to buy this by Friday because I have a hard deadline and I'm honestly panicking a bit. Is the i9 just overkill if I'm not planning to overclock it at all? Or should I just stick with the i7 and put the extra cash into more RAM or something? I just need something reliable that wont choke when I start layering effects...
